Fenugreek (Trigonella foenum) is an herb with light green leaves and small white flowers. It is cultivated for its edible seeds. Fenugreek has three culinary uses: as a herb (dried or fresh leaves), as a spice (seeds), and as a vegetable (fresh leaves, sprouts, and micro greens).Fenugreek seeds are used in candy, baked goods, ice cream, chewing gum , pickles, vegetable dishes, daals, spice mixes, and soft drinks and also used in breads in Egypt . Fenugreek seed is widely used as a galactagogue (milk producing agent) by nursing mothers to increase inadequate breast milk supply. It is an important source of diosgenin, which is widely used in the production of steroids, sex hormones, oral contraceptives and veterinary medicines.
